Sweet Onion Dressing
Makes 16 (¼ Cup) Servings

Ingredients:
½ medium Vidalia onion, roasted
8 cloves garlic, chopped
¼ cup chopped parsley
2 T sugar
½ C Dijon mustard
2 C extra virgin olive oil
¼ C white wine vinegar
½ C water
1 tsp kosher salt
1 tsp black pepper
Instructions:
Preheat the grill or preheat the oven to 400. Grill the onion until light brown. Place in a food processor and pulse until finely chopped. Add the garlic, parsley, sugar, and mustard and process. Slowly add the oil. Add the vinegar, water, salt, and pepper and process until well-combined.
