Quick Nut Bread Makes 1 Loaf

Ingredients:
2/3 C sugar
1/3 C canola oil
1 egg, beaten
1 ½ C fat-free milk
1 ½ C all-purpose flour
1 C whole wheat flour
1 T baking powder
½ tsp baking soda
1 tsp salt
1 C finely chopped walnuts
Instructions:
Preheat the oven to 350. Coat a 9"X 5" loaf pan with cooking spray. In a medium bowl, thoroughly combine the sugar, oil, and egg. Stir in the milk. Add the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt, and stir until smooth. Fold in the nuts. Place the mixture into the prepared pan.
Bake for 1 hour, or until the loaf is brown on the top and firm to the touch in the center. Cool in the pan for 15 minutes, then remove from the pan and cool on the rack. For easiest slicing, refrigerate to cool further before slicing.
