Glazed Bell Peppers and Snow Peas

Ingredients:
3 C snow peas, trimmed
2 T water
1/3 C balsamic vinegar
1 tsp sugar
1 tsp extra virgin olive oil
½ large red bell pepper, cut into short strips
1 clove garlic, minced
1/8 tsp salt
1/8 tsp ground black pepper
Instructions:
Place the snow peas and water in a large microwaveable bowl. Cover with vented plastic wrap and microwave on high power for a total of 5 minutes, or until crisp-tender; stop and stir after 3 minutes. Drain.
Bring the vinegar and sugar to a boil in a small saucepan over medium-high heat. Cook, stirring constantly, for 3 minutes, or until the mixture is reduced to 2 T. Remove from the heat.
Warm the oil in a large nonstick skillet over medium heat. Add the bell pepper and garlic and cook for 2 minutes, or until crisp-tender. Add the snow peas, salt, black pepper, and the vinegar glaze. Toss to mix.
