Black Bean Dip
The South Beach Diet by Arthur Agatston, M.D.
Makes 3 Cups
Ingredients:
1 can (14-19 ounces) fat-free refried black or pinto beans
1 C sour cream
1 can (14 ½ ounces) diced tomatoes
1 jalapeno chile pepper, chopped (wear plastic gloves when handling)
½ tsp salt
1 tsp ground black pepper
1 C (4 ounces) shredded cheddar cheese (optional)
Instructions:
Preheat the oven to 325. In a large bowl, combine the beans, sour cream, tomatoes (with juice), chile pepper, salt, and black pepper. Spoon into a 1-quart shallow baking dish or pie plate. Top with the cheese if using. Bake for 10 minutes, or until heated through.
