Bean-Flour Pancakes

Approximately 10 small pancakes
Ingredients:
¾ C garbanzo bean flour, sifted
½ tsp salt
1 tsp double-acting baking powder (aluminum free)
1 ½ T oil
½ C water
1 egg
Instructions:
Combine dry ingredients. Separate egg, placing yolk in bowl with dry ingredients. Beat egg whites until stiff, but not dry. Add remainder of ingredients to bowl. Fold in whites, just until blended. Pour pancakes on preheated griddle or non-stick frying pan, set between medium and medium-high heat. Can lightly grease frying pan with oil if desired. Flip pancakes when golden brown. Brown other side. Remove and enjoy!
