Baked Bananas

Ingredients:
4 bananas
¼ C olive oil
Juice and grated rind of 2 lemons
1 T vanilla
1 tsp cinnamon
Instructions:
Preheat the oven to 350. Cut the bananas in half lengthwise and place cut side down in a baking dish greased with the oil. Drizzle the bananas with the lemon juice and vanilla and sprinkle with the grated lemon rind and cinnamon. Bake for 15 to 20 minutes.
