Apple Walnut Muffins

Makes 12 muffins
Ingredients:
1 ½ C whole wheat or whole grain pastry flour
2 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
¼ tsp salt
¾ C buttermilk
3T canola oil
2 T packed brown sugar
2 T sugar
1 egg, beaten
½ medium apple, peeled and finely chopped
½ C chopped walnuts
Instructions:
Preheat the oven to 400. Coat a 12-cup nonstick muffin pan with cooking spray or line with paper baking cups.
In a medium bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.
In a large bowl, combine the buttermilk, oil, brown sugar, sugar, and egg. Stir in the flour mixture until just combined. Do not overmix. Stir in the apples and walnuts.
Evenly divide the batter among the prepared muffin cups, filling them about two-thirds full. Bake for 12 minutes, or until a wooden pick inserted in the center of a muffin comes out clean. Cool on a rack for 5 minutes. Remove to the rack to cool completely.
