Lemon-Garlic Prok Tenderloin (makes 4 servings)

2 (3/4 lb.) pork tenderloins

1 T fresh lemon juice

6 cloves garlic, minced

1/2 tsp sea salt

1/4 C extra virgin olive oil

1 T grated lemon peel

1 T dried oregano

1/2 tsp fresh ground pepper

In large, resealable plastic bag, combine olive oil, lemon juice, lemon peel, garlic, oregano, salt and pepper. Add pork, toss until coated, refrigerate for 8 hours or overnight. Drain and remove pork, discard marinade. Grill covered over medium coals for about 13 to 14 minutes on each side or until juices run clear and meat thermometer reads 160 degrees. Let stand for 5 minutes before slicing.
